Autumn Brew Recipe:
Mix together 1 qt each cranberry and pineapple juice.
Add 2C water, 1/3C brown sugar, 1C Orange Spice Mix.
Heat until warm.

Autumn's Pumpkin Roll
(Autumn in our Head Chef and is also born in the fall)
3 eggs
1 cup sugar
2/3 cup pumpkin
1 tablespoon lemon juice
3/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
1 teaspoon ginger
1/2 teaspoon nutmeg
1 cup pecans, finely chopped
Sifted powder sugar
Cream Cheese Filling
1 (8-ounce) package cream cheese, softened
4 tablespoons butter, softened
1 1/2 cups sifted powdered sugar
1 teaspoon vanilla extract
Preheat oven to 375 degrees.

Autumn's Pumpkin Roll

1 cup sugar
2/3 cup pumpkin
1 tablespoon lemon juice
3/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
1 teaspoon ginger
1/2 teaspoon nutmeg
1 cup pecans, finely chopped
Sifted powder sugar
Cream Cheese Filling
1 (8-ounce) package cream cheese, softened
4 tablespoons butter, softened
1 1/2 cups sifted powdered sugar
1 teaspoon vanilla extract
Preheat oven to 375 degrees.
Spray a 15x10x1-inch baking pan with vegetable spray. Line pan with parchment paper. Spray parchment paper with vegetable spray. Set aside. In large mixing bowl, beat eggs with a mixer
at high spped for approximately 5 minutes or until thick and lemon colored. Gradually beat in sugar. Stir in pumpkin and lemon juice. In a medium bowl, sift together flour, baking powder, salt, cinnamon, ginger and nutmeg. Fold flour mixture gently into pumpkin mixture. Pour batter into prepared pan, spread evenly. Sprinkle with nuts. Bake approximately 15 minutes or until a toothpick inserted into center comes out clean.
Assembly: Invert cake onto a clean, cotton towel sprinkled with powdered sugar. Starting at narrow end, roll up towel and cake together. Cool completely. In medium mixing bowl, blend cream cheese and butter until creamy. Add powdered sugar and vanilla extract. Carefully unroll cake and spread with cream cheese filling. Roll up cake. Place seam side down on serving platter. Cover and chill until serving time.
